Doboroku (craft sake) can be considered the genesis of sake. It is sake brewed without the process of PRESSING, the separation of the liquid (sake) from the fermentation mash. The cloudiness comes from from the sake rice grain that remains in the drink (but do not mistaken it as a nigiri aka cloudy sake which goes through the process of pressing.
Doburoku was a home brewed concoction at one point but was banned by the Japanese law during the Meiji period to regulate production and taxation of alcohol. Currently, the ban has been lifted but a Craft Sake license in Japan is required.
